Actually, many California chardonnays do not go through malolactic fermentation, but they won't be the buttery chards many associate with the state. I'm not up on the California chardonnay scene at the moment, but I recommend this wine blog: http://www.comeforthewine.com/. Wine writer Marcy Gordon regularly writes about California wines, and you'll find lots of good info there. She may also have a few recommendations on hand.Mattie John Bammanhttps://www.blogger.com/profile/15341904224807622530noreply@blogger.comtag:blogger.com,1999:blog-7475013645992123650.post-26697873630945484462016-03-31T20:37:08.082-07:002016-03-31T20:37:08.082-07:00Thanks for the great information. I needed to use red wine in a recipe, and decided to have a glass or two. When my stomache ache started, I must have remembered reading about the histimine effect because I gt the idea to pop an antihistimine...and within fifteen minutes, my red wine stomach ache disappeared. I think I found my solution for an occasional red wine, if that is what others are drinking.Unknownhttps://www.blogger.com/profile/07961919490439151931noreply@blogger.comtag:blogger.com,1999:blog-7475013645992123650.post-33625774069654559632011-06-08T02:12:47.727-07:002011-06-08T02:12:47.727-07:00A quick comment on the line:

Sulfite allergy is a rare but real and potentially fatal reaction, hence products with a relatively high sulfite content need to be labelled.Anonymousnoreply@blogger.com
